Antonio Banderas' character recognizes that his students do not like the music or dancing that he is teaching them. So, on his 3rd seen day in the movie, he shifts things up and brings in a different kind of music and dancing. Dancing that, according to the woman of the day before, is about romance and beauty.
This is just an excellent example of adaptation of curriculum. However, he won't teach them the tango until they have "earned it." This is just an awesome movie so far.
